The team shares a vision for the future of Indian cuisine. An endeavour to recreate the purest traditional and regional cuisines, while simultaneously creating innovative and modern dishes. Interpretations like Butter Chicken of Indian origin, Bombay lamb/beef from Mumbai, Madras chicken from Madras, Goan fish/prawns curry from Goa, chilli crab from Kerala etc. All created using original sauces, some homemade authentic Indian spices, locally-produced ingredients like poultry and dairy including some organic foods.
