Ten years ago, we could see the gap.
Talented young people in the Shoalhaven could not see the full scope of what hospitality could be. Many only knew local cafes, clubs or pubs. Very few had exposure to hatted restaurants, artisan production, or the broader career pathways our industry offers. At the same time, our region was growing. New restaurants, producers and venues were emerging. The opportunity was here, but the pathway was not always visible.
Gaining Through Training was created to close that gap. To show young people what is possible. To connect them directly with the people and places shaping our food industry today.

Our cafes, restaurants, producers and event venues create local employment, attract visitors and shape the identity of our region. When the industry thrives, the community thrives. But like many regional areas, we face workforce shortages. Developing local talent is not optional. It is essential.

Many young people have limited exposure to workplace expectations, particularly after years of isolation and distance learning. Confidence, communication and professionalism are skills that need practice.
Early industry exposure breaks down perceived barriers. It allows students to see themselves in these environments. It builds self belief. Through mentoring, hands on experience and real responsibility, students discover that they are capable. Some secure apprenticeships. Some gain part time work. Others take these skills into university or different careers.
The outcome is bigger than a job. It is confidence, direction and connection to community.
