Di Laver brings a lifetime of experience to the hospitality industry, with a career spanning food retail, catering, education and regional advocacy.
Before training as a home economist, chef and food stylist, she operated a successful delicatessen and catering business, and supported her husband in his butchery—laying the groundwork for her deep, practical understanding of the industry.
Di started teaching hospitality in the Shoalhaven in 1979 and went on to lead the Tourism and Hospitality Department at TAFE Illawarra’s Nowra campus for 35 years. During this time, she set a new benchmark for hospitality training within the NSW TAFE system. She was instrumental in securing the funding that led to the construction of the state-of-the-art commercial cookery facility at Nowra TAFE, and she introduced the highly acclaimed Celebrity Chef dinners, which continue as a signature feature of TAFE’s culinary program.
Always ahead of the curve, Di made a point of connecting with at least one industry professional every day—listening closely to emerging needs, identifying opportunities, and building strong relationships that continue to shape the local industry today. Her leadership also saw the formation of Brand Shoalhaven Inc., promoting the region as a gourmet destination long before “food tourism” became a trend.
Di is passionate about preparing the next generation of hospitality workers and about making the Shoalhaven as well known for its hospitality as it is for its natural beauty. Over the past four decades, she has mentored countless apprentice chefs, many of whom are now key players locally, nationally and internationally. Under her guidance, the concept of Home Grown Heroes was established—celebrating chefs who trained in Nowra, travelled the world to hone their craft, and have returned home to pass on their skills to the next generation.
Today, Di remains an active and respected figure in the industry. She participates in restaurant judging, serves on selection panels, and consults with local businesses to improve operations, staff training and customer service. Her dedication, insight and unwavering passion continue to strengthen the Shoalhaven’s vibrant and evolving food culture.
